It is possible, but it might take a while.

The next version of the STM project template will use CubeMX, so all devices supported by CubeMX will be available.

Will "eclipse-plugins" use "newlib" in part of STM32H7xx ?

Projects built with the GNU MCU Eclipse plug-ins use whatever libraries are available with the toolchain.
