Navigate to C/C++ General -> Paths And Symbols.
Select the Symbols Tab.
Add a new Symbol and in the value field, reference an environment variable inside quotes e.g. "${PATH}".
Click save and the trailing double quote is removed.
I've been able to reproduce this issue with the same word he is using but not with other words.
