WHAT

We could add a piece of documentation that motivates and describes the usage of the connector transfer process response channels feature, introduced here eclipse-edc/Connector#4579.

WHY

This is aligned with a feature request eclipse-tractusx/sig-release#936 for release 25.03, so a detailed explanation can be found there.
