Sexy Chicken Schnitzel
2 chicken breasts (schnitzel sliced)
Herb rub
Handful Parsley
Handful Coriander
1/2 Green chilli (without the seeds)
2 cloves of garlic
thumb of ginger
2 tsp harissa
juice of 1/2 lemon
salt
2 beaten eggs
Breadcrumb mix
1 cup of good breadcrumbs
1 tbsp salt
2 tsp pepper
2 tsp coriander seeds
2 tsp cumin
2 tsp za’atar
1 tsp cayenne pepper
trace elements
bay leaf
cinnamon
allspice
nutmeg
red chilli
paprika
turmeric
garam masala
celery seed
Rub chicken with herbs, coat in egg and then the breadcrumb mix. Fry until golden-brown, serve with chips sautéed in chilli-garlic oil and pomegranate.
