Make RabbitMQ exchange parameters configurable

Currently the only configurable parameter of the RabbitMQ exchange in the exchange name, but other properties such as durability use default values and are not configurable. This will render the plugin unusable if the existing RabbitMQ topic exchange has different parameters.
