LogsDB - Extend the `elastic/security` challenge to use LogsDB

### Description

We would like to performance test the `elastic/security` track using LogsDB so that we can compare indexing throughput, disk storage footprint and query latency when the index mode is `standard` versus `logsdb`. Security solutions rely on the `logs-*-*` index pattern and, at some point, LogsDB will be enabled for such use cases too.
