Remove remaining asciidoc files from project

We've converted docs over to markdown, but some asciidoc files remain. This is an issue to ensure they are removed:

• Versions.asciidoc
• index file in docs/community-clients
• java-rest docs

re Versions.asciidoc, this is used in a qa test to verify the validity of the Lucene version used in the docs with the one in version.properties. Does the new docs system have such a version, or can this file just be removed?

re java-rest docs, can these be removed altogether? These are for the old java rest client which has been removed. Or must these remain for the low level client?

if this is being used in QA maybe we don't want to touch it for the time being, I don't think this was on the docs team's radar tbh

It's being used in a single test, and the purpose is to check the Lucene version actually in Elasticsearch matches that which is in the docs. Is there some equivalent file containing properties in the new docs system?
