source-monday: replace aiostream.streams.merge with CDK async_streams.merge function

Running `poetry lock` updated Pydantic to version `2.12.3` which caused the spec snapshot test to update. This is due to Pydantic `v2.11.0a1` always including the `additionalProperties: True` for arbitrary dictionary schemas.
