Improve UX for SP's who want to make changes to the monitoring files

Summary

SP's can now leverage our prebuilt monitoring stack in their environment per, https://boost.filecoin.io/tutorials/setting-up-a-monitoring-stack-for-boost#dns-resolution-for-prometheus. As mentioned in those docs, SP's may make configuration updates to those files locally. The problem is that the current install instructions for Boost make this flow tedious to work with, and it will likely lead to conflicts when we make updates to those files in the future.

We should improve and document this flow to enable SP's to more easily extend/modify these files so that updates are easier and require less manual overhead.
