Update lassie grafana dashboard to have SP metrics granularity for HTTP, bitswap, and graphsync

As we work towards increasing retrieval success rate for SPs, let's update the grafana dashboards to make it easier to delineate SP rates across each major transport protocol: HTTP, graphsync, and bitswap.

There's a little bit of nuance, as we use peerIds, not SP IDs, so we need to add logic (or use HeyFil) to not include E-IPFS for example.

Ultimately, we should be able to view the following metrics:

• Overall SP retrieval success rate

And any combination of:

• Overall SP HTTP retrieval success rate
• Overall SP graphsync retrieval success rate
• Overall SP bitswap retrieval success rate
