test(rsvp): add missing invitation tracking properties to test mocks

- tests/api/dashboard.guests.happy.test.ts: add viewPercentage and isViewed to guest invitation mock
- tests/components/guests.hooks.test.tsx: update GuestInvitationDTO mock with new tracking fields
- tests/lib/rsvp-v2/service.limits.test.ts: include tracking properties in RSVP limit tests
- tests/unit/rsvp-v2.service.branches.test.ts: add tracking defaults to service branch test mocks
- tests/unit/rsvp-v2.service.test.ts: update core RSVP service unit tests with tracking state
