Astro: Add redirects for changed URLs

Before cutting over from Gridsome, we need to ensure redirects are in place for any URLs that have changed:

- Slug normalization differences (hyphens vs underscores)
- Case changes in paths
- Any removed/reorganized content

This ensures SEO continuity and prevents broken links from external sites.
