add configuration for additional resources in API Server EncryptionConfiguration #10

What would you like to be added:
For the landscaper service use case it would be benificial to configure additional resources, besides "secrets", in the Kube API Server EncryptionConfiguration.
Why is this needed:
The landscaper stores potential sensitive data in landscaper specific resources, like targets etc.
These resources should be stored encrypted.
