Bump arrow to 57

I am currently working on supporting GEO types and index in Lance, which is an open lakehouse format for multimodal AI. More details please see lance-format/lance#5035. Thanks to the great work of the geoarrow community, this is the foundation upon which I achieved goals.

Lance is currently bumping the arrow-rs and datafusion versions in lance-format/lance#5291, so we hope the upstream geoarrow-rs will synchronize the bump. Additionally, I would like to contribute PRs.

Thanks for the issue and PR!

I'm just getting back from vacation. There are a few places we need to bump versions in order to bump an arrow version in geoarrow-rs. It looks like pyo3-arrow already supports arrow 57 so we don't need to do anything there.

So yes, it looks like we need arrow-wasm to bump to arrow 57 and then we can bump to arrow 57 here
