Upgrade to latest Node LTS

The current site only runs on Node 10 due to an issue addressed in PR #7 

This issue is to resolve the bug described in the PR and upgrade to the latest available node lts at that time.

Be sure to update the NODE_VERSION env variable in the netlify build configuration as well.
