Structured Logs: Collect `stdout` per default

Mentioned during the review of moving logs out of experimental.

I think before we do this we should make sure default stdout collection is turned on so that doesn’t need to done in a new major version

From today's Cocoa Sync:

We want to Sentry Logs disabled by default with the next major (v9) by having options.enableLogs = false. But when the SDK user enables logs using options.enableLogs = true it should automatically enable the stdout log integration by default.

In other words, we want to have opt-in for logs, but then opt-out for stdout logging.

@noahsmartin is going to share a PoC of the integration.
