Port Sentry Logs to POtel

The whole Sentry Logs feature must be ported to POtel branch and use the OpenTelementry SDK to handle logs wherever possible.

This needs some research on how Logs are handled in the OpenTelementry SDK.

The current implementation seems to work OOTB on potel-base. We can see at a later point whether we want to incorporate OTel's logging API in the background (should be doable in a minor release since the public API won't change), but for now let's use the custom sentry solution.
