User Feedback: Rails logging docs are over-complex and lack flow

Sentry Feedback: DOCS-9NE

These rails logging docs are massively over-complex and don't flow well at all when reading (it's not clear how one logging strategy relates to another, or when specific config is necessary and when different config is not.. etc). I think the whole thing deserves a redo tbh, I'm sure Sentry is great (and I'll still be a future customer most likely) but these docs aren't great, I shouldn't have to resort to unofficial third party guides or AI for implementation.
