docs(perf): pin the GoCoin comparison to socket-fetch numbers
GoCoin pulls blocks over P2P, so the comparable bitcoin-rs figures are the REST runs where both pay a socket round-trip. Quoting the local block-file result against GoCoin would reintroduce the same harness mismatch just corrected for Core.

Quoting the 84.6s local-file result against GoCoin would reintroduce exactly the harness mismatch corrected above for Core.
