Remove dependency on workaround client_golang fork

Currently Mimir is pinned to a forked version of client_golang to allow the /metrics handler to filter output via the name[] parameter: #13746

We are waiting for the PR to be merged upstream: prometheus/client_golang#1925

When this work is available in upstream, the pinning clause should be removed from go.mod
