[deployment] remove `@pulumi/kubernetesx`

It's now deprecated, unmaintained and causes issues with recent K8s versions. Also noticed that with Pulumi v4, the use of parent field causes strong dependencies between resources, leading to downtime and weird behaviour issues.

We can copy some of the code, or write our own helpers instead.
