Upgrade dependencies (Spring Boot and gRPC)

Recently, the rival product grpc-spring-boot-starter by LogNet was finally upgraded to latest dependency versions. For this project, it's been almost a year since the last release.

Simple request, please upgrade dependencies, especially Spring Boot and gRPC, to latest versions.

I tried building the current state of the master branch with Spring Boot upgraded to v3.4.4 and gRPC to v1.71.0. The server works like a charm, but I didn't test the client.

Oh, and one more thing. To avoid requests like this, please create releases more often. Please check dependency updates on a regular basis, e.g. every two or four weeks, and create a new release when there are new dependency versions.

I agree. Please, make new releases with updated dependencies more often. The last release was a year ago. I am looking forward for this change: #1112
