Mention tags in instructions

Our current instructions don't explain how to use the stable versions (tags). It was not possible to do this for ODW 2025 (mainly due to time constraints). This issue is to discuss how to do that.

Here a a few questions to address:

• When to use tags/git checkouts?
• How to use tags in Google Colab and My Binder? In particular, is it possible to do this with URLs ?

One idea would be to create a lightweight tag, say latest, to point to the latest release (maybe in CI action). According to my research, it's possible to create URL so that My Binder will use latest (https://discourse.jupyter.org/t/using-the-latest-tag-of-a-repo/31409) but it's hard to do in Google Colab directly (https://stackoverflow.com/questions/79352309/github-tags-in-google-colab).

So maybe for Google Colab it's better to instruct participants to import the notebooks on Google Drive and work from there.
