Unit tests failing due to datetime mismatches

Describe the bug
There is a mismatch between expected and resultant date assertions in 6 unit tests when executing the test suite in the GMT -5 (EST - Toronto/NYC) time zone.

To Reproduce
Steps to reproduce the behavior:

1. Use EST timezone
2. execute gradle build

Expected behavior
Expect the unit tests to pass
