- 8 oz noodles (rice, soba, ramen, udon, or spaghetti)
- 1/2 C natural peanut butter (drippy kind)
- 3 T soy sauce (or Tamari)
- 1 T maple syrup or agave
- 1 T rice vinegar
- 1-3 t sriracha or Chile Garlic Sauce (page \pageref{chile-garlic-sauce}) (optional)
- 1 t toasted sesame oil
- 1 garlic clove, minced
- 1 lime, juiced (about 2 T)
- 4-6 T warm water, to thin
- Garnish: peanuts, sesame seeds, green onions, cilantro
Cook noodles according to package directions. Drain.
While noodles cook, whisk together peanut butter, soy sauce, maple syrup, rice vinegar, sriracha (if using), sesame oil, garlic, and lime juice in a bowl. Add warm water 1 T at a time until smooth and pourable but still thick.
Pour sauce over noodles and toss to coat. Add a splash of hot or cold water to loosen if needed. Garnish and serve.
