Create case study articles for how to use key datasets

I think the documentation would be far improved with articles that dive in to using specific key datasets. The example list is not always super helpful.
Datasets I'd prioritize for articles are:

• Health insurance estimates (SAHIE) - already used as the core example in Getting started
• Poverty estimates (SAIPE and histpov2)
• American Community Survey
• Decennial Census
• Household Pulse Survey
• Economic indicators (EITS)
• Economic Census
• Microdata - already started at Accessing Microdata, but would rewrite or move to whatever the new format for these articles looks like.

Suggestions and examples of code that users have written are very welcome!
