EPIC: Metrics updates for InfluxDB 3 Core & Enterprise

Metrics Updates

This ticket serves as the top-level epic for many updates we need to do for metrics tracking to ensure there's more visibility into the status of InfluxDB 3 Core & Enterprise. These are being broken down into several different categories with a sub-ticket for each and a list of metrics total.

The main sections are:

• Main Performance
• Catalog & Compaction
• Object Store
• Cache Performance
• Processing Engine

These metrics should all be served from the /metrics endpoint in Prometheus format. Some of these metrics already exist, and those will be addressed in each sub-ticket.

@peterbarnett03 - for the few metrics that we have added in the monolith, we have prefixed their name with influxdb3_. In the issues you created, the names don't seem to have this. I am wondering if we want to keep prefixing names with influxdb3_ to stay consistent.
