How to handle gtsummary themes?

We should probably check the calling environment for a gtsummary theme and if it's present, pass it along to the env where we eval the table.

since the environment is backed in the table upon creation (get_theme_element in tbl_summary) I think that we are good in most cases. I did a few checks, it works like a charm as long as the them is set before table creation:
