Replace Bitnami dependencies

Bitnami have done a rug-pull on the Internet and only latest tag will be available in the community edition: bitnami/charts#35164

This makes it impossible to use their images for production, or much of anything in my opinion. Granted that the included dependencies in the Invenio Helm chart might not be intended for prod use anyway, I think we should move away from them just to avoid trouble for the Invenio users.

I think we should replace the Bitnami Helm charts used as dependencies to Invenio with something more stable.

Describe alternatives you've considered

It's possible to just pin the images used by the Helm chart dependencies. Perhaps that's the best stop-gap measure until we've found suitable replacements for the charts?

CloudPirates are establishing an alternative free and open source Helm charts repository (called "nonami"). Heavily inspired by Bitnami and seem to try achieving the same quality. The number of charts is smaller at this point of course, but growing. Several popular services are already available.

As a quick temporary solution, you can use the bitnamilegacy repository. So far I needed to change the following

You are right, @HugoDuret . That is indeed something we should do as a first step, considering it's likely going to be a while until we figure out a better long-term solution for all components.
