[Task]: Define and implement automatic changelog

Task description

We currently have to manually write every changelog. This is time consuming. With squashed commits and verbose PR names it should be possible to better automate changelog updates.

Two possible options are Github's automatic system and covector (for which there is a PR already open - #414).

It may still be necessary to manually adjust the changelog, but having it automatically collated will save some time.

Requirements

• Decide which automatic changelog approach is best
• Implement the new approach (may need updating the workflow)

• Automatic changelog implemented
