[Task]: Compile natively for M1 Macs

Task description

The Mac builds currently use Rosetta. There should be native M1 compilations available.

Requirements

• Investigate what is required to compile native M1 versions
• Update the build script
• Publish separate versions for Intel vs. M1 macs
