enable support for client key auth

Hi - first of all I wanted to thank you for building cognito-local. We are using cognito-local for running our integration tests and it is working really well for us.

We are using to use oauth/token flow authenticate machines. But I couldn't find a way in cognito-local to enable client auth.

I have the same problem as you @adilhafeez , we're using the oauth2/authorize, oauth2/token flow for authenticating our swagger ui generated from the code
(example of integration in swagger UI : https://www.straypaper.com/swagger-openid-oauth2/)

We haven't found the way to make this work with cognito local (but it perfectly works for integration tests)

Localstack Pro provides this feature in its Cognito module :

Endpoints are available through http://localhost:4566/_aws/cognito-idp/oauth2/token for example

It would be awesome if cognito local could provide those endpoints oauth2/*
