explain Gather vs Transcribe

I think we need either a feature guide or a tutorial article explaining the differences in Gather and Transcribe, along with how they can be embedded in config/dial etc and where to use each one.
My understanding at the moment is that Gather is better for IVR type menu scenarios and Transcribe would be better for converstational use?
