Upgrade to 6.0.11 is asking for gradle upgrade.

I upgraded from 6.0.10 to 6.0.11 but now it starting giving below error:

Dependency 'androidx.camera:camera-video:1.5.0' requires Android Gradle plugin 8.6.0 or higher.

   This build currently uses Android Gradle plugin 7.3.1.

I cant move on to 8.6.0 for now as some other packages of my project are not yet compatible.

Could you help on this ?

You have to make all the app packages compatible with each other; there's no other way. A relatively easy way to do this is to update everything to recent versions, both of Flutter and all its dependencies.
