[GeoServer] Update Chart to use current Geoserver version

Hi,

we want to update our GeoServer instance to the most current release.
However, we are facing some issues regarding the permissions in the datadir. It seems like the folders and files are owned by root, but in the current versions it should be owned by the geoserveruser.
Are there any plans to update the official charts to include the current release of the GeoServer image?

@74170 We do have plans for it but since this is a pro bono project we work on it when we have free moments. I urge you to take the lead and do a PR for this so that we can review and merge
