The Handwriting Recognition Example had rendering issues due to missing backticks which caused the final image and the Final Remarks section to display incorrectly.

This fix adds the missing backticks to resolve those layout problems

Code Review

This pull request primarily fixes a Markdown rendering issue in the handwriting_recognition.md example by adding missing closing backticks for a code block. This change is correct and resolves the described layout problems. I have added one suggestion to also update the Last modified date in the related example files for consistency.
