roachtest: create CollectionBuilder for BackupRestoreTestDriver
This commit teaches the `BackupRestoreTestDriver` used in our roundtrip roachtests to provide a `CollectionBuilder` handle. This allows us to more granularly create backups and perform operations during backups. Informs: cockroachdb#163231 Release note: None
