Bump node-gyp to ^5.0.5 or ^6.0.0 in order to support python3

Hello @Unitech, thanks for this package!

Python2 is deprecated since 1.1.2020, so I tried to build my project only with python3. However it does not work, since node-runtime-stats uses an old version of node-gyp as dependency. It would be awesome if you could update node-gyp to either ^5.0.5 or ^6.0.0!
