Add docs for AgentgatewayPolicy #471
Description
The AgentgatewayPolicy replaces the TrafficPolicy for agentgateway and was introduced in kgateway-dev/kgateway#12723.
This new policy also adds support for:
- access logging
- backend config (tls, tcp, etc.)
