Docker file errors

The generation with the docker file does not encode the strings correctly (accents in Spain, etc.).

Could it be that the RMLMapper that is used is outdated? Or is it not during the generation of the RDF that this happens?

Same version of the tools in local works... So I'm assuming that the issue is with the version of the JVM or with Ubuntu.
