Custom module log (like Forms)

What happens with custom modules? Eg. Webforms doesn't appear in the email log.

• When develop mode enabled, will emails be sent or not?
• When develop mode disabled, will emails use the custom SMTP?
• How can we log those emails as well? Maybe an option 'custom' for all other modules to set to Yes/No?
