Add auditwheel-symbols check

https://github.com/kiwix/kiwix-build/issues/881 proved we've achieved to build and release an non-compliant libzim.

We should have auditwheel-symbols check (used in https://github.com/kiwix/kiwix-build/issues/881#issuecomment-3492528543) in the build process so that we will catch this kind of issue during nightly releases.
