[Feature request]: Make polyphony into a mode, instead of a key that needs to be held down.

This is heavily related to #1459 (chord notes are being missed), in order to improve workflow when recording chords.

Problem

When step-recording full chords by utilizing polyphony, one can only ever use one hand on the MIDI keyboard, because the other hand needs to hold down Shift.

Possible solutions

1. The simplest is to make Shift into a mode, sort of like how Edit Mode is a mode. Something that can be toggled on and off.

2. However, there is a second, perhaps smarter approach one could take: Record polyphonically when notes are being played simultaneously, but not when played separately. This would imply that the Edit Line jump would only happen at the end of a chord being played, not for every note in the chord. This would hopefully allow the best of both worlds.

I am very much in favor of option 2. But the first thought I had regarding the issue of having to hold down shift was to simply detect caps lock as holding shift. Just food for thought...

That's also a good idea, and still valuable since Shift is still required if you want to add notes to a row where there already are notes.

I'm just going to spell out my idea formally so there is no doubt about what I'm thinking of (feel free to disagree or improve though):

Hmm, there's no need to hold down shift if you start placing the first note with shift though, so if option 2 were to be implemented I think there's no need for my proposal. EDIT: Except if you record instead of editing and want to record over notes without replacing them...

It's also needed if you are adding notes to already existing notes. I don't think it will be possible to do that if Shift isn't supported, since you "start over" every time you press down the first note.

I mean if you want to add multiple notes to the same row, you only have to hold shift for the first one if you play the others simultaneously.
