+# Mexican Quinoa
+
+## Ingredients
+
+- 1 cup quinoa (uncooked)
+- 8 oz can artichokes
+- 14 oz can diced tomatoes
+- 2 ea zucchini
+- 1 ea onion
+- 1 ea red bell pepper
+- 8 oz chopped mushrooms
+- 1 tsp turmeric
+- 2 tsp thyme
+- 1 tsp paprika
+- 0.5 tsp ground bay leaves
+- 4 ea cloves garlic
+- 1 bunch parsley
+- 1 ea lemon
+
+## Preparation
+
+1. Cook quinoa (if needed).
+1. Dice zucchinis, onion, mushrooms, red bell pepper, garlic.
+1. Saute chopped vegetables in pan, then add tomatoes when soft.
+1. Add spices and cook for a bit.
+1. Add quinoa and mix well, top with parsley and lemon jiuce before serving.
