[FEATURE] Open API (swagger) automatically generation

Motivation

Auto generate OPen API definition and also swagger for the backend for two main reasons:

• Include it on docs like model registry
• Automatically generate FE Types.

High-Level Design/Mock-ups

The issue is already created on #46

After this is merged, all new backend PRs that change the API contracts must also update the API generation.
