Modifying a DataFrame value

I'm looking for the ability to modify the values in a DataFrame (I want to give each cell in one of the columns > blockquote formatting ready to format each row into a Markdown document).

I thought I wanted to use a DataFrame Operations node with the Replace Value operation. But I can't work out how I'd use the existing value and modify it to get the outcome I need.

Any suggestions?
