Migrate to new CouchDB driver

We're currently using the [`cloudant`](https://pypi.org/project/cloudant/), which was deprecated and reached and of life end 2021. We might wanna look into switching to [`couchdb`](https://couchdb-python.readthedocs.io/en/latest/) instead at some point.
