Why does lichess have frequent scheduled downtime?

It seems that lichess servers frequently go offline for scheduled updates or maintenance? I'm wondering why the servers need to go completely down for this process. It feels atypical and other sites don't have the same issue.

It seems you're wrong about that.
When it restarts (usually around 7/8 AM UTC) it takes 1 minute to be operational again.
When there's maintenance, there's an explicit warning.
