ci: Include version in archive names

At the moment, the archives generated by CI are always named:

livepeer-<ARCH>-amd64.tar.gz

A user is unable to determine the version that they are downloading solely based on the archive name.

Include the version in the archives generated by CI.

Ex.

livepeer-<ARCH>-amd64-<VERSION>.tar.gz
