Use the site's paragraphs better.

Currently, we ask the AI to return HTML, which we put in a single text paragraph.

We could exploit more of the site's editing capabilities by sending the AI a description of all the available paragraphs, including their field types and field names and asking it to return the content as a structure that we can create multiple paragraphs from.
